Laurie over at Passionate Penny Pincher has one recipe for us today and it is a good one – Loaded Potato Soup.
This is Laurie’s traditional meal that she serves on Christmas Eve and I can see why. It sounds so good and looks like it will be super easy to make! I may actually make it for dinner tonight!

I found a very similar recipe from Paula Deen several months ago @ the smithfield website and it is SOOOOOOO good. I have to make a triple batch for my family. We eat it for days. It is great reheated.

Laurie – I’m getting ready to make the soup and it says Pour in chicken stock and water…….how much water? I missed that – I only have 4 cups chicken broth. Thanks.

I made this soup tonight and it was awesome! I too, could not find how much water so when it got really thick I added a little bit more broth and that seemed to do the trick. LOVED IT! Thanks for the recipe!
